Light, filling, healthy & delicious.
These rolls are perfect for a summer lunch, definitely one of my favorite options. They are also super versatile, super easy to make and perfect to eat on the go. Hope you enjoy them as much as I do!!
250 g of green beans
1/2 a cabbage
rice pancakes (I buy the brand Blue Dragon)
Cut the carrots and the green beans into julienne and add in a pan with a little bit of water. Set to medium heat. Then add the leeks chopped into pieces and finally add the cabbage, cut very finely into stripes. Let everything cook together until tender.
Once you have your veggies ready it’s time to wrap them in the pancakes. To do that you’ll need to place one pancake into hot water until it’s soft (10 seconds) and blot on a damp tea towel.
Place the filling in the middle of the rice pancake and fold over the bottom and the sides. Finally, roll the pancake upwards to form the roll.
Put in the oven for 20 min at 180ºC.
Serve hot and season with soy sauce or fresh lemon.
