Vegan Rice & Cashew Buddah Bowl

A Buddha Bowl consists of a meal-sized bowl filled with simple pure food and then enjoyed with gratitude. I absolutely love this concept and it promotes exactly what I believe about nutrition and food.

INGREDIENTS

1 cup of rice (basmati or jasmin rice are my faves)

1 carrot

2 handful of frozen peas

1/2 avocado

a handful of cashews

3 nuts or some toasted cashews

1 lemon

1 clove of garlic

sesame seeds

DIRECTIONS

Soak the cashews in water for some hours.

Boil de rice, depending on the variety you choose it should boil more or less time, make sure you take a look at the packaging to see exactly how many time it has to be boiling.

Meanwhile spiralize a carrot (or grate it if you don’t have spiralizer).

When the rice is about to be done, put two handful of peas in the boiling pan and wait for three minutes. Then you can strain the rice and the peas.

To make the sauce you’ll need to add the soaked cashews in a blender together with the clove of garlic and some lemon juice, you can also add some water if needed to make a creamy consistency.

Mix the sauce with the rice, the peas and add the grated carrot. Then you can sprinkle some toasted sesame seeds, some nuts of your choice and add the sliced avocado on top.

Super easy, simple, delicious, healthy and nutritious!! Enjoy.
