I always thought cheese was gross until I saw this recipe and knew I had to try!! I feel the world is divided when it comes to this topic, some people hate it, some people can’t live without it. I personally think if those who assure that they can’t live without cheese knew how much saturated fat, how much cholesterol, the amount of calories and the nasty ingredients they put in the cheeses they are consuming, they would inmediately stop eating it…
This vegan almond cheese, on the other hand, doesn’t contain any weird processed foods, just almonds, spices and lemon juice. It’s super easy to make, super healthy and nutritious!!
Open your mind, take note and start changing little things that make a big difference!!
100 g raw peeled almonds
100 ml water
1 clove of garlic
Soak the almonds in water for 6 hours or overnight.
Drain the almonds and put them into a blender together with the water, garlic, a pinch of salt, the lemon juice of half a lemon and a tablespoon of herbs.
Blend until smooth and creamy.
Remove the mixture from the blender into sieve that has been lined with a piece of cloth (you can use a cheesecloth but I used a piece of old sheet and it worked perfectly). And let it sit overnight.
After the cheese has drained and there’s no water in it, transfer the cheese dough to a mould to give it the desired shape and add some more herbs, paprika, pepper and salt on top.
Bake in the oven at 160ºC for 25 min.
Let it cool down and enjoy!!
