Vegan Pizza · Chickpea Crust

CHICKPEAS. This is the secret for this new recipe. I’m just obsessed with them, since I tried to make falafels I can’t stop eating, they are so addictive!!

So, to make falafels a little bit more fun, I had the brilliant idea to make a pizza/falafel crust, and let me tell you that this recipe is life-changing!! You NEED to try. Take note, it’s super easy:

INGREDIENTS

For the crust:

100 g chickpeas (canned)

1 clove of garlic

some leaves of parsley

a pinch of salt

1 tsp of ground cumin

a pinch of ground pepper

a dash of lemon juice

1/2 a sweet onion

For the toppings:

mushrooms

cherry tomatoes

1 tomato or tomato sauce

a handful of rocket

1/2 a zucchini

1/2 an aubergine

a handful of spinach

1/2 sweet onion

oregano

DIRECTIONS

Put all the ingredients of the crust in a blender and blend until you get a consistent dough. Place in the oven tray and extend the dough.

Slice all the toppings and add them on top of the dough. I added some slices of tomato, aubergine, zucchini, sweet onion and mushrooms.

Place in the oven for 20 to 30 min. until the dough is crunchy and golden.

Add some tomato cherries, a handful of spinach and sprinkle with some oregano. Put in the oven for 5 more min.
