What is Christmas without cookies?! Exactly, the smell of cinnamon and spices all around the house is a festive must. So, let me introduce you to the most delicious Christmas cookies. These are vegan and sugar-free. A super healthy and delicious version of the traditional spiced Christmas cookies.
Lately I’ve been super busy doing uni stuff so I didn’t have many time to feel festive. But now, with Christmas around the corner, I decided to share some Christmas joy with you and make a couple of festive posts to get you all excited!!!
So, let’s get started with my Christmas Essentials series. Take note:
INGREDIENTS (100 little cookies aprox.)
60 g buckwheat flour
50 g almond butter
70 g oatmeal
50 g raisins or sultanas
1 tsp flax seeds
1 tsp poppy seeds
3 generous tbsp apple sauce (if you like more sweetness you may want to add 1 tbsp of apple sauce and 2 tbsp of maple syrup)
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
Combine the buckwheat flour and the oatmeal. Add the spices and mix.
Pour the seeds and the raisins in a food processor and blend. Then add the apple sauce and the almond butter and blend again.
Combine all the ingredients together until you get an homogeneous dough.
Make a little ball, cover the dough with a film and place in the refrigerator for two hours.
Preheat the oven to 180ºC.
After the two hours, knead well the dough, you may want to use some extra flour if it sticks to the table. Roll out the dough and then you can start to cut it into shapes.
Bake for 12 min in the oven.
